Bacon & Tomato Grilled Cheese Sandwich

Mmmmm…. bacon. Everything goes better with bacon!

This is a very quick and easy special I like to cook for lunch.

 

Bacon & Tomato Grilled Cheese Sandwich

Ingredients

  • 4 or 5 strips of bacon
  • 3 slices tomato
  • 2 slices of texas toast
  • 2 slices cheddar cheese
  • 2 slices swiss cheese

Preparation

  1. Butter each slice of bread on one side and place buttered side down on flat top.
  2. Add 2 cheddar slices to one half of the bread and 2 Swiss slices to the other half.
  3. Place 4 or 5 strips of cooked bacon and 3 slices of tomato on the cheddar halve.
  4. Close sandwich with the melted Swiss halve.
  5. Serve with choice of side and garnish with a pickle spear.

Prime Rib, Mushroom & Swiss Cheese Sandwich

Prime Rib, Mushroom & Swiss cheese sandwichWhat do you do with the Prime Rib you didn’t sell from the night before? Well, you make a special out of it the next day of course.

Our cooks tend to robotically use it for making a French Dip sandwich. I hate doing the same thing over and over all the time, and since I was the cook in charge I opted for something a little different.

Three ingredients that definitely go well together in my opinion are beef, mushrooms and Swiss cheese. You really can’t go wrong when you use this combination.

This is a super-easy sandwich that really pays off, and the first customer of the day proved the point. When I wandered out of the kitchen to grab a fresh cup of coffee after cooking this special for a couple of guys that walked in for lunch, my ears were treated with a compliment when one of the two said to the Manystars Chef, “You really cook a mean sandwich.” Continue reading

Wyoming Highway 130 Closed – November 2011

Wyoming Highway 130 Seasonal Closure

Due to the last snowfall and extremely strong winds, Wyoming highway 130 has officially closed for the season and should reopen sometime next May, typically in time for the Memorial Day weekend.

This year however, the opening did not happen until June 10th, almost two weeks after Memorial Day.

The Snowy Range Ski Area is planning to open the day after Thanksgiving. With the snow we are receiving now, I see no reason why they would not have favorable conditions for opening as scheduled.

Winter seems to be taking over, though the increasing numbers of snowmobiles so early is a bit troubling. Give it a rest people…

Western Bacon Cheeseburger

Western Bacon Cheeseburger

Today’s daily lunch special, a Western Bacon Cheeseburger with choice of side.

What is it? Well, it an all-beef patty, two strips of bacon, two slices melted American cheese, two crispy hand-battered onion rings and smothered with some Sweet Baby Ray’s barbecue sauce.

Pretty simple and un-complex really… unless, of course, you happen to work in a kitchen that doesn’t have a deep-fat fryer for cooking the onion rings.

Being a “can-do” kind of person, my solution to this little dilemma was to grab my favorite iron skillet and fill it with about an inch of vegetable oil. I turned the burner on to a little over medium heat to bring the oil up to temperature and then maintained the temperature of the oil just under the smoking point.
