Okay… we just hosted a huge wedding reception, and, well, we have a few leftovers that need to be taken care of.

Someone kind of over-calculated how much cole slaw we were going to need and ordered, well, let’s just say we ordered way, way, WAY too much! :-)

Fortunately, Sysco was kind enough to take most of it back even though they were not obligated to do so. But we were still left with a couple of unboxed containers that needed to be used somehow.

So I tried to think of something to do with cole slaw besides serving it as a side and came up with the Southern Slaw Burger. I don’t think it is an authentic Southern recipe, but it’s close enough. Continue reading →

Wyoming Highway 130 is open to single lane travel at mile post 55 near Ryan Park.

There is a 12 foot width restriction and an 8 ton per axel weight limit in effect.

Click the image to visit the web cam located at the temporary bridge to see whats happening and if there might be construction going on.

The Snowy Range Scenic Byway over the Snowies is officially open yet again. Lake Marie, Medicine Bow Peak, etc., are all accessible to the public. I haven’t been up there in a few weeks, but I am sure there is still a considerable amount of snow left is some areas.
